Mini M&Ms Cake

Ingredients

  • 1 cup baking mix, regular or gluten free
  • 1 egg, slightly beaten with fork
  • 1/3 cup sugar
  • 1/4 sour cream
  • 1/3 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/3 cup mini M&Ms, save a few to decorate top of frosted cake

Directions

  • Preheat oven to 350°, spray a 6 inch round cake pan with cooking spray, set aside.
  • In a medium mixing bowl mix egg, sugar, sour cream, milk, and vanilla extract.
  • Add the baking mix and beat for about a minute, until all is blended together. Pour in to prepared baking pan.
  • Before adding the M&Ms to your batter lightly toss them in a little bit of flour, (this helps so they don’t sink to the bottom), Now sprinkle M&Ms evenly on top of batter and slightly push down with a spoon.
  • Bake in the preheated oven for about 30 minutes, until toothpick inserted in center comes out clean.
  • Set on cooling rack, cool completely before frosting with you favorite frosting, then sprinkle a few saved M&Ms on top. Cut and Serve. Enjoy!
