Chicken Spinach Rice Bake

Ingredients

  • 1/2 pound boneless chicken breast, cut into small pieces
  • 2 tablespoons olive oil
  • 1 & 1/2 cups milk
  • 1/3 cup grated parmesan cheese
  • 4 ounces cream cheese, cut into cubes
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon umami mushroom seasoning, or you favorite seasoning blend
  • 2 teaspoons paprika
  • 2 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 8 ounces frozen spinach (squeeze out liquid if needed)
  • 2 cups cooked rice
  • salt and pepper to taste

Directions

  • In a large skillet on medium heat add olive oil and chicken, cook until opaque, a few minutes.
  • Turn heat down to low, add milk, stir in parmesan cheese and cream cheese, stir until melted. Mix in the spinach.
  • Add all the seasonings, stir in the cooked rice, add half of the mozzarella cheese and stir until combined.
  • Pour everything into a medium casserole dish, top with the remaining mozzarella cheese, cover with foil.
  • Bake in preheated 350° oven for about 30 minutes. Serves about 3-4. Enjoy!
