Banana Toffee Coffee Cake

Ingredients

  • 3/4 cup baking mix, gluten free or regular
  • 1/3 cup brown sugar
  • 6 tablespoons butter room temperature or shortening
  • 1 egg
  • 1 medium mashed banana, about 1/2 cup
  • 1/4 cup milk
  • 1 teaspoon cinnamon
  • 1/2 cup toffee baking bits

Directions

  • Preheat oven to 350°, spray a 6 or 7 inch baking pan with cooking spray, set aside.
  • In a medium mixing bowl cream together sugar and butter or shortening.
  • Add egg, milk, and beat into the creamed mixture until blended.
  • Stir in the baking mix and cinnamon, mix until blended.
  • Pour batter into prepared baking pan, bake for about 30-35 minutes in preheated oven, until toothpick or knife entered in center comes out clean.
  • Set on cooling rack, after cooled transfer coffee cake to a serving dish and drizzle with glaze. Sprinkle top with extra toffee bits if you like. Serve and Enjoy!
