Banana Pecan Mini Loaves

Ingredients

  • 1/2 cup gluten free or regular flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 ripe mashed medium banana
  • 1 egg
  • 1/8 cup milk
  • 1/4 cup light brown sugar
  • 1 tablespoon cooking oil
  • 1/2 teaspoon vanilla
  • 1/4 cup chopped pecans
  • 2 small loaf pans, 6x3x2

Directions

  • Preheat oven to 350°, spray loaf pans with cooking spray, set aside.
  • In a medium mixing bowl mix together mashed banana, egg, cooking oil, milk, vanilla, and light brown sugar, beat with fork until blended.
  • Add flour, baking powder, and baking soda, mix in completely.
  • Stir in pecans, pour in to prepared loaf pans, Bake about 25-30 minutes, until toothpick inserted comes out clean.
  • Set on cooling rack to cool. Take out of pans to slice and serve.
  • Drizzle with glaze, if you like. Enjoy!
