Zucchini and Parmesan Cheese Omelet


  • 2 eggs
  • Pinch of onion powder
  • 1/4 cup shredded or sliced zucchini
  • 1/4 cup shredded parmesan cheese
  • 1 pat butter
  • salt and pepper to taste


  • In a small bowl beat eggs and onion powder with a fork.
  • Turn burner on stove to low/medium in a small skillet, add butter melt.
  • Pour eggs in to skilllet, tilt skillet so egg can cover bottom.
  • Add shredded zucchini and most of the parmesan cheese, save some for top.
  • Lower heat to low if needed.
  • When egg is firm, fold in half with a spatula.
  • Cook for about a minute, flip over and cook for about a minute on other side.
  • Remove from skillet and sprinkle remaining cheese on top.
  • Add your favorite breakfast sides. Serve and Enjoy!
