Gluten Free Blueberry Sour Cream Cake


  • 1 cup gluten free baking mix
  • 1 egg
  • 1/3 cup sour cream
  • 1/2 cup milk
  • 1/8 cup cooking oil
  • 1/2 teaspoon lemon extract
  • 1 cup fresh blueberries
  • *Make sure to use gluten free ingredients to make it gluten free!


  • In a medium mixing bowl beat together the egg and sour cream with a fork.
  • Add the cooking oil, milk, and lemon extract. Mix together.
  • Add the baking mix and mix, beat with a fork for about 2 minutes.
  • Fold in the fresh blueberries.
  • Spray a 7 or 8 inch round pan with cooking spray, I used a 7 inch spring form pan.
  • Bake in a preheated 350° oven for about 40-45 minutes, until toothpick inserted in center comes out clean.
  • Place on a cooling rack to cool, release out of the pan onto a dish.
  • When completely cooled drizzle with your favorite glaze. Serve and Enjoy!
