Easy Cranberry Chicken over Rice…


  • 2 boneless chicken breast cut up into bite size pieces
  • 1 can whole berry cranberry sauce
  • 4 tablespoons bbq sauce
  • 2 tablespoons low sodium soy sauce
  • 1 or 2 pinches of red paper flakes, to your taste
  • salt and pepper to taste
  • 3 cups hot cooked white rice.


  • In a skillet on medium high heat add 2 tablespoons olive oil, add the cut up chicken and saute until opaque/white, a few minutes.
  • Add cranberry sauce, bbq sauce, soy sauce, red pepper flakes and mix well with chicken.
  • Turn heat down to simmer and simmer for about fifteen minutes.
  • Serve over hot cooked rice. Serves about 3 or 4. Enjoy!
