Sour Cream Blueberry Loaf


  • 1 cup gluten free pancake /waffle mix
  • 1 egg
  • 1/2 cup milk
  • 1/3 cup sour cream
  • 1/4 sugar
  • 2 tablespoons cooking oil
  • 1 cup frozen or fresh blueberries
  • *Make sure to choose gluten free ingredients to make it gluten free!


  • In a medium mixing bowl add milk, egg, sour cream, and cooking oil, beat together with a fork.
  • Add pancake/waffle mix, mix in completely and beat with fork for about 2 minutes.
  • Fold in blueberries.
  • Pour batter into a 9×5 loaf pan, sprayed with cooking spray.
  • Bake in pre heated oven @ 375° for 35-40 minutes.
  • Cool on cooling rack to cool, slice in pan or remove and slice. Enjoy!
