Banana Pecan Chocolate Chip Loaf

Ingredients

  • 3/4 cup regular or gluten free flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 medium mashed ripe banana
  • 1/3 cup light brown sugar
  • 1/2 cup milk
  • 1/3 cup cooking oil
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1/3 cup chopped pecans
  • 1/3 cup mini semi sweet chocolate chips

Directions

  • In a medium mixing bowl add mashed banana and egg, beat together with fork.
  • Add light brown sugar, cooking oil, vanilla, and milk, blend together completely.
  • Add flour, baking powder, and baking soda, blend everything together.
  • Stir in chopped pecans and mini chocolate chips.
  • Spray a 9×5 loaf pan with cooking spray.
  • Pour batter into loaf pan, spread evenly.
  • Bake in a pre heated 350° oven for about 35-40 minutes.
  • Place on a cooling rack to cool. Can be left in pan or taken out to slice.
  • Serve warm or completely cooled. Enjoy!
