Peach Cobbler


  • 16 ounce bag frozen peaches, thawed
  • 1/4 light brown sugar
  • 3/4 cup regular or gluten free pancake mix
  • 4 tablespoons melted butter
  • 2 eggs
  • 1/3 cup milk
  • 2 tablespoons light brown sugar
  • whip cream or ice cream when serving


  • In a medium mixing bowl add eggs, 2 tablespoons light brown sugar, and milk beat together with fork, add melted butter.
  • Add pancake mix, blend everything together completely.
  • Spray a round or square 8 inch baking dish with cooking spray.
  • Spread peaches and the 1/4 cup of light brown sugar in baking dish, stir to dissolve sugar.
  • Evenly spread batter over peaches.
  • Bake in preheated oven @ 375° for about 25 minutes.
  • Serve warm or cold. Top with Whipped Cream or Ice Cream. Enjoy!
