Zucchini Fried Rice


  • 3 cups cooked white rice
  • 1 medium/large zucchini, cubed
  • 1 cup thin sliced carrots
  • 1 egg
  • 2 tablespoons roasted garlic infused olive oil
  • 1 tablespoon butter
  • 2 tablespoons low sodium soy sauce
  • sliced green onions for garnish topping
  • salt and pepper to taste


  • In a large skillet add olive oil turn heat on high.
  • Add the zucchini and carrots, stir fry for about ten minutes.
  • Stir in rice and mix with vegetables. Turn skillet down to medium.
  • Push aside rice mix to make a clear spot in skillet, add butter.
  • After butter is melted crack egg in cleared part of skillet, scramble.
  • After egg is cooked mix in with rice and vegetables.
  • Stir in the lower sodium soy sauce, completely mix everything together.
  • Cook to heat through and serve, top with sliced green onions. Enjoy!
