Collard Greens Three Cheese and Bacon Quiche


  • 1 cup shredded cheese, your favorite or shred leftover pieces, I used parmesan, swiss, and colby jack
  • 1 can 14 ounce, chopped collard greens, drained and squeeze out liquid
  • 4 eggs, slightly beaten with fork
  • 3/4 cup half and half or whole milk
  • 4 tablespoons bacon pieces
  • 1 small onion finely diced, optional
  • Salt and fresh cracked Pepper to taste
  • 1 – 9 inch frozen pie crust


  • Spread collard greens evenly in pie crust.
  • Mix together in a medium bowl the half and half or milk and eggs beat together with fork.
  • Add and mix together cheeses, bacon, onions if you are adding, and salt and pepper to taste.
  • Pour into pie crust over collard greens, stir around to evenly mix ingredients.
  • Place on baking sheet, Bake in pre heated oven at 350° for 50-60 minutes.
  • Take out when center is not jiggly and set.
  • Let stand for about 10 minutes before cutting and serving.
  • Serves 4 as a main dish or 8 as a side dish. Taste good with fruit. Serve and Enjoy!
