Pesto Shrimp Pasta


  • 12 jumbo shrimp or more if using smaller shrimp, shelled and deveined
  • 6 ounces pasta cooked to package directions
  • 3 tablespoons pesto paste, or home made pesto
  • 3 tablespoons butter
  • 3 tablespoons olive oil
  • 2 teaspoon minced garlic, from jar
  • salt and fresh cracked pepper to taste
  • a fresh diced tomato
  • About 2-3 ounces shredded mozzarella cheese
  • sprinkle fresh or dried basil and parsley, for garnish optional


  • In a skillet on medium heat add butter, olive oil, pesto paste, minced garlic, stir to blend.
  • Add shrimp toss in skillet until pink all the way thru, about 5 minutes.
  • Add cooked pasta and toss everything together, heat through or pour shrimp pesto over hot pasta.
  • Top with fresh diced tomatoes and shredded mozzarella cheese.
  • Sprinkle with fresh or dried basil and parsley to garnish, optional.
  • Serves about 2-3.
