Potato and Ham Soup

Easy potato and Ham Soup

32 ounces low sodium chicken or vegetable broth

2 cups diced potatoes

1 cup sliced carrots

2 tablespoons butter

1/2 cup milk

4 ounces diced ham

3/4 cup potato flakes

salt and pepper taste

Garnish with parsley, optional

Add everything into a slow cooker Except potato flakes and milk, turn on high, cook for about 3 or 4 hours, depending on your slow cooker.

After vegetables are tender, mash with potato masher a few times, right inside of the slow cooker.

Stir in potato flakes and milk, soup will thicken.

Add salt and pepper to taste. Serve hot with crackers, sandwich, or in a bread bowl.
