Made with Oat Flour and Oatmeal – Chocolate Chip Oatmeal Pecan Cookies – Gluten Free
Chocolate Chip Pecan Cookies
- 1 cup oat flour
- 1/2 cup quick oats
- 1/2 teaspoon baking soda
- Pinch salt
- 2 eggs
- 4 tablespoons butter, room temperature
- 1/4 cup white sugar
- 1/4 cup light brown sugar
- 1/2 cup chocolate chips
- 1/3 cup chopped pecans
- Pecan halves for garnish, optional
In a medium mixing bowl cream together sugars and butter.
Add eggs mix in stir until completely blended.
Stir in oat flour, quick oats, baking soda, pinch salt, and pecans, chocolate chips, mix completely.
Drop by spoonfuls onto a sprayed with cooking spray cookie sheet, garnish top of each, if you like, with a pecan half.
Bake @ 350° for 10-12 minutes, transfer to cooling rack.
Makes about 18 cookies.
