Happy Mardi Gras – I made Dirty Rice with ground pork and Easy Pralines. I usually make Beignets but I forgot to buy powdered sugar, you can’t eat Beignets without powdered sugar!
1 cup pecan pieces
1/2 cup sugar
1/2 cup light brown sugar
1/4 cup heavy cream
2 tablespoons butter
In a small sauce pan melt butter on medium-low heat, add heavy cream stir together.
Add sugar and light brown sugar, stirring constantly, until sugars are dissolved.
Increase heat to medium, simmer until mixture reaches 240-250 degrees F, stir occasionally. If you don’t have a candy thermometer you can: Drop a few drops of mixture into a glass of cold water and if it forms a ball then it is ready.
Remove from heat and slowly stir in pecans.
Drop by tablespoons about 2 inches apart onto parchment or wax paper.
Cool completely and store in an airtight container.
