Make ahead Easy Grab and Go Breakfast or just a really good tasting muffin!
Bacon Maple Oatmeal Breakfast Muffins
- 1 & 1/3 cup regular or gluten free pancake mix, I used gluten free
- 2/3 cup quick oats
- 2 eggs, slightly beaten with fork
- 3/4 cup milk
- 1/4 cup cooking oil
- 1/3 cup Maple syrup
- 1 jar or bag of real bacon pieces, about 2.8 ounces
- light brown sugar to sprinkle on top before baking, optional
Mix eggs, oil, maple syrup, milk, and oil in a medium size mixing bowl.
Add pancake mix and oatmeal, mix in completely
Stir in half of the bacon pieces.
Pour batter into prepared muffin pan, each about 3/4 full.
Sprinkle each top with a little light brown sugar, and a few pieces of bacon, if you like.
Bake @ 350° preheated oven for about 20-25 minutes, depends on the size of your muffin pan.
Take muffins out of pan and cool on rack.
Makes about 6-8 muffins, depends on the size of your muffin pan.
I pop leftovers in freezer.
