Gluten Free Cornbread made in an Cast Iron Skillet. Crunchy crust on cornbread taste so good. Cooking in hot oiled skillet gives the cornbread a nice crunch.
Cast Iron Skillet Cornbread
- 3/4 cup self rising cornmeal (not mix)
- 2/3 cup buttermilk
- 2 tablespoon butter melted or oil
- 6 inch cast iron skillet
- 1 tablespoon oil
Pour cooking oil in cast iron skillet, set in oven at 425°.
Meanwhile in a medium mixing bowl add buttermilk, and butter or oil, stir in self rising cornmeal.
Take cast iron skillet out of oven set on stove, skillet is super hot be careful! Pour batter into hot skillet,
Return to oven and bake for about 20 minutes.
