Vegetable Stew with Rice

Vegetable Stew with Rice, Carrots, Potatoes, Kale, Sweet Potatoes, and Celery

  • 32 ounce vegetable broth
  • 3 large carrots sliced
  • 2 stalks celery sliced
  • 1/2 cup chopped onions (optional)
  • 2 cups chopped kale or 2 handfuls
  • 2 small to medium sweet potatoes, peeled and cut into chunks
  • 4 medium regular potatoes, peeled and cut into chunks
  • 1/4 cup uncooked rice
  • Salt and fresh ground pepper to taste

Pour vegetable broth in to the slow cooker, set on high.

Add Carrots, celery, kale, and onions, cook for about 2 hours, then add potatoes, rice, and sweet potatoes.

Cook for another 1 & 1/2 to 2 hours, until potatoes are done.

Turn slow cooker down to warm setting and Serve.
