Stuffed Green Peppers – Baked in Oven
- 1 – 28 ounce can tomato sauce
- 3 green peppers
- 1 pound ground beef (85/15 or 90/10)
- 1 cup cooked rice
- 2 eggs
- 3 tablespoons olive oil
- 1 teaspoon onion and garlic powder, paprika optional
- salt and pepper to taste
Core green peppers, wash and cut in half lengthwise
Place beef, eggs, rice, spices, olive oil in bowl and mix until completely combined
Stuff meat into peppers, roll any meat left over into balls
Place stuffed peppers into oven safe pan with lid
Pour tomato sauce over all peppers (dice any leftover pepper pieces,sprinkle on top).
Preheat oven 350 ° cook covered for about 1 hour 15 minutes
Serve with your favorite side dish.
