Cranberry & Almond Sour Cream Loaf

Cranberry & Almond Sour Cream Loaf – Gluten Free

  • 1 cup gluten free flour – measure for measure or 1 to 1 etc…
  • 1/2 cup sugar
  • 2 eggs, slightly beaten with fork
  • 1/2 cup sour cream
  • 1/4 cup oil
  • 1/2 cup milk
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon almond extract
  • 1/2 cup Craisins
  • 1/2 cup sliced almonds

Place Craisins in a small bowl cover with hot water, for a couple minutes to soften, drain

In a mixing bowl add eggs, sugar, oil, sour cream, milk, almond extract and mix to completely blend together

Stir in gluten free flour, baking powder and baking soda, mix until blended

Add Craisins and Almonds mix into batter

Pour batter into sprayed 9×5 loaf pan, sprinkle more Craisins and almonds on top, if you like

Bake @ 350° for about 50 minutes

After loaf is cooled drizzle with glaze or sprinkle with powdered sugar, or leave plain.
