Chicken Barley Soup

Chicken and Barley Soup with Baby Carrots

  • 1 chicken breast or 2 thighs boneless
  • 32 ounce chicken broth
  • 1 package baby carrots (12 ounce)
  • 1/4 cup pearl barley
  • 1/4 cup chopped onion (optional)
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon parsley
  • 2 teaspoons olive oil
  • Chopped green onion tops (garnish top when serving)

  • Place everything in slow cooker, cook about 4 hours on high
  • Take out chicken let cool a little, dice and put back in slow cooker
  • Garnish with chopped green onion tops and serve
