Pina Colada Cake – Gluten Free

1 cup gluten free flour (measure for measure, 1 to 1)

1 teaspoon baking powder

1/4 teaspoon salt

2 eggs

8 ounce can pineapple tidbits with juice

1/3 brown sugar

1/3 oil

1/2 cup milk

1/3 cup shredded coconut

1 teaspoon vanilla or rum extract

Extra coconut for top after frosted

In mixing bowl add eggs, brown sugar, oil, milk, vanilla, mixed together

Stir in pineapple with juice

Add flour, baking powder, salt, and coconut, completely blend all together

Pour into a sprayed round or 8×8 pan

Bake @ 350 degrees for about 30 minutes

Cool completely, frost with buttercream frosting or with your favorite frosting. Sprinkle top with more coconut.
