Corn Dog Griddle Cakes
1/2 cup gluten free corn meal
1/4 cup gluten free pancake mix
3/4 – 1 cup milk (start with 3/4, add more if batter gets to thick)
2 teaspoons sugar
1 tablespoon oil
2 hot dogs sliced thin, (your favorite)
Mix all ingredients, except hot dogs, in mixing bowl.
Add sliced hot dogs to batter, Stir to combine.
Pour about 1/4 cup onto sprayed, heated mini griddle or frying pan, flip after a couple of minutes on each side. Makes about 6.
Serve with mustard and ketchup or your favorite sauces. Maybe honey or maple syrup?
