Stuffed Green Peppers – Slow Cooker

Stuffed Green Peppers


1 – 28 ounce can tomato sauce

2 green peppers

1 pound ground beef (85/15 or 90/10)

1 cup cooked rice

2 eggs

3 tablespoons olive oil

1 teaspoon onion and garlic powder, paprika optional

salt and pepper to taste


Core green peppers, wash and cut in half lengthwise

Place beef, eggs, rice, spices, olive oil in bowl and mix until completely combined

Stuff meat into peppers, roll any meat left over into balls

Place stuffed peppers and any balls into slow cooker

Pour tomato sauce over all peppers

Turn slow cooker on high and cook for about 4 hours

Serve with your favorite side dish
