Lemon Bar Cake – Gluten Free

Small Lemon Bar Cake – Gluten Free

3/4 cup gluten free flour

1/2 teaspoon baking powder

1/4 cup sugar

1/4 cup oil

1/4 cup milk

1 egg

1/8 cup fresh lemon juice

2 teaspoons lemon zest

Mix wet ingredients in a bowl, add dry ingredients stirring together completely

Pour into a sprayed 9×5 loaf pan

Bake @ 350 degrees for about 30 minutes

After cake has cooled frost with a fresh lemon juice buttercream frosting.

Refrigerate and serve cold.
