Chicken Taco Rice, Black Bean, & Corn Dish

1/2 – 1 pound cooked cut up boneless chicken breast

1 can tomato sauce (15 ounce)

1 can chicken broth (15 ounce)

1 can black beans (15 ounce)

1 can corn (15 ounce)

1 envelope taco seasoning mix

3 cups cooked rice (approx.)

8 ounce shredded cheddar cheese

Tortilla chips when ready to eat, serve on the side.  

Mix all in ingredients except rice and cheese in a sauce pot, cook on medium about 15-20 minutes to completely blend.  Stirring frequently.  Stir in rice.  Take off stove.  Serve hot and add cheese on top to melt.

Tip: I use all low sodium or sodium free ingredients when available.
