Easy Gnocchi and Cabbage

Easy Gnocchi & Cabbage

1 package of gnocchi, about a pound

1 package shredded cabbage and carrots (cole slaw mix), about a pound

1 small onion chopped

2 tablespoons olive oil 

3 tablespoons butter

Salt and Pepper to taste

Grated Parmesan, Romano, or Asiago cheese to taste

Put olive oil into a large skillet on medium heat, add onion and cabbage mix

Cook and stir until cabbage is tender

Meanwhile make gnocchi to package directions, drain and add to cabbage, turn burner to low,

Add butter and toss to coat everything, heat all the way through

Serve with grated Parmesan, Romano, or Asiago cheese (your choice) on top.
