Nut Roll

I use my bread machine to mix dough, easier on the hands.


Nut Roll Dough

1/2 stick butter softened

1/2 block softened cream cheese (4 ounces/half block)

1/4 cup sugar

1 egg

1/2   cup warm milk

1 teaspoon salt

2 1/2 cups unbleached flour

1 1/4 teaspoons bread machine yeast

Cream butter, cream cheese, sugar.   Add egg, warm milk, and salt mix completely.  Stir in flour and yeast.  completely mix all ingredients together.  Place in refrigerator for at least 2 hours.  I divided the dough into 3 parts, and rolled out one at a time.

Nut Filling

1/2 lb. ground walnuts
1/4 c. milk
1/4 c. butter
1/4 c. sugar
1 tsp. vanilla
Place milk in pan; add butter and let butter melt over medium heat. Add vanilla, then sugar and nuts; stir until blended. Cool. If too thick, add more milk.

After rolling out dough spread with nut fulling, roll up dough evenly and pinch ends together to close.  Place on sprayed cookie sheet with seam side down.

Bake at 350 degrees for 25-30 minutes or until golden.

Use your favorite glaze. Basically powdered sugar and a few teaspoons of milk.  Drizzle glaze over nut roll, as thick as you like.  You can glaze while still warm, (not while hot or glaze will just melt off), or wait until it cools  I used buttercream frosting softened in the microwave.  I was out of powdered sugar.
