Almond Flour Coconut Cake

I added a little christmas color to this cake, since it was white and looked like snow…

Almond Flour Coconut Cake

1 cup almond flour

2 teaspoons baking powder

1/4 teaspoon salt

4 tablespoons softened butter

1/3 cup sugar

3 eggs

1/3 cup sour cream

1 teaspoon almond extract

1/3 cup unsweetened coconut

Mix and cream together softened butter and sugar, add eggs, sour cream, and almond extract mix all together completely

Stir in almond flour, baking powder, salt, and coconut, blend all ingredients together

Pour into a prepared round or square pan

Bake at 350° for 30-35 minutes

Cool cake and frost with buttercream frosting flavored with almond extract instead of vanilla extract.  Sprinkle unsweetened coconut on top.
