This is really an easy recipe! And it is really good, I will be adding to my regular recipe rotation & making these Maple Syrup Sweet Potatoes with granola crumbled on top again…
Maple Syrup Sweet Potatoes
6-8 small sweet potatoes (about 3 inches long)
1/4 cup maple syrup
3 Tablespoons butter
1/3 cup your favorite granola for topping, before serving (I used a cranberry almond type granola)
Peel and wash sweet potatoes, place in slow cooker/crockpot
Pour maple syrup evenly over sweet potatoes
Add butter on top
Turn slow cooker on high, cook for 2-3 hours, depending on your slow cooker until cooked all the way through.
Carefully Spoon out sweet potatoes to a serving dish, try to keep whole, pour liquid from slow cooker over sweet potatoes
Crumble granola on top when ready to serve.
