Almond Flour Pancakes

2 eggs

1/4 cup milk

1 teaspoon baking powder

1/4 teaspoon salt

1 teaspoon vanilla

2 tablespoons maple syrup

Whisk all ingredients together

Pour about a quarter cup of batter (per pancake) into heated frying pan or griddle, use a little oil in pan if needed

Flip when bubbles appear on top of pancake, cook other side

Serve with maple syrup, jam, jelly on pancakes, add some fruit, fresh or frozen and enjoy!
