This cake reminds me of the cinnamon crunch bagels you can buy at Panera Bread, or the taste of those old fashion cookies, snickerdoodles…


Cinnamon Crunch Oat Flour Coffee Cake
1 & 1/4 cup oat flour
2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon allspice
1/4 cup sugar
2 eggs
1 cup applesauce
1/4 cup oil
1 teaspoon vanilla
sift together oat flour, baking powder, cinnamon, allspice, and salt set aside
mix together sugar, eggs, oil, applesauce, vanilla
add dry ingredients and blend together
pour into prepared round or 8×8 square pan
Set aside and make topping
Topping
1/4 cup sugar
1/2 teaspoon cinnamon (or according to taste)
2 tablespoons butter (cold)
3 tablespoons oat flour
Mix together cold butter, oat flour, sugar, and cinnamon in processor or with pastry blender
Crumble evenly on top of batter in pan
Bake at 350° for 35-40 minutes
Sprinkle a little sugar and cinnamon on top of hot cake, about 2 tablespoons sugar and a pinch of cinnamon, this gives it a little crunch on top.
