Apple cake made with oat flour… Easy to grind your own oats in the processor and less expensive. I threw in about a fourth of a cup of raisins this time, sounded good to me. Also chopped walnuts would be a good stir in too.
I frosted the Apple Cake with a little buttercream frosting.
Apple Oat Flour Cake
1 & 1/4 cup oat flour
1/4 teaspoon salt
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 cup vegetable oil
1 teaspoon vanilla
1/2 can apple pie filling
Sift together oat flour, salt, baking powder, cinnamon, set aside
Mix eggs, oil, vanilla, beat slightly add apple pie filling, stir all together mix completely
Add dry ingredients into the wet ingredients mix together
Pour into a prepared pan sprayed with cooking spray (round or square 8×8 pan)
Bake at 350° for 40 – 45 minutes
Wondering what to do with the other half can of apple pie filling? Well how about using it as a topping on waffles or pancakes, or throw it in a small frying pan with a little butter and make fried apples as a side dish for dinner. Maybe just make another cake!
