You can grind your own oat flour, it is cheap and easy. Just put oats in processor and buzz away to a fine flour. I use a magic bullet, I have had for years. Easy to clean too. They are still available to purchase and less expensive then they were over ten years ago.
Oat Flour Chocolate Chip Cookies
1 & 1/3 cup oat flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/3 cup white sugar
1/3 cup light brown sugar
1 stick softened butter (1/2 cup)
1 teaspoon vanilla
1/2 cup dark chocolate chips
Sift together dry ingredients, set aside
Cream together sugars and butter add egg and vanilla mix together
Add dry ingredients and chocolate chips mix thoroughly
Drop by teaspoonfuls on cookie sheet, lightly sprayed with cooking spray
Bake at 350 degrees for 10 – 14 minutes
Makes 18 cookies
The photos below are the first try at this recipe, believe it or not, the flat cookies were really good too. They flattened out and ran together, I cut them with the spatula to separate. I actually liked them better, is was like the less oat flour let the other ingredients come through with more flavor, the buttery taste.
I started the recipe with one cup of oat flour, I added 1/3 cup more oat flour to the recipe so they wouldn’t flatten out, basically I experiment with measurements when I try new recipe ideas, you can too, just don’t add to much flour they will taste more like biscuits!
