This dish is easy and quick, great for a summer holiday or picnic, no cooking and no heating up the kitchen. It can be eaten by itself and also is great on top of a greens salad instead of salad dressing. Need something quick for a luncheon or pot luck, this recipe can be thrown together in less than 15 minutes.
Pea salad
1 – 12 ounce bag frozen peas
2-3 tablespoons real bacon bits (small diced ham can be substituted)
1/4 cup shredded cheese
1/3 cup light or regular mayonnaise
place frozen peas in a strainer and rinse under cold water until they are thawed, drain really well and pat dry with paper towels
transfer peas to a bowl and add the rest of the ingredients mix completely
ready to eat or refrigerate for later
salt and pepper to taste later when eaten
the ingredients can be adjusted to taste, less or more mayo, bacon bits, cheese
recipe is a small batch, enough for 2 people for a lunch plate or 4 people to add as a side dish for dinner
For a picnic or pot luck just double or triple the recipe to make what is needed.
