I love oatmeal, I eat a lot of oatmeal so I am always trying to come up with new oatmeal recipes, some are hits and some are misses. Best thing about oatmeal is, it is really good for you. Use it in place of bread crumbs in meatloaf. Have a bowl of cooked oatmeal, add a little brown sugar and raisins or stir in some chopped prunes, chopped nuts, fresh fruit etc… Oatmeal can easily be ground up to a flour, to use as a replacement in part of the flour in recipes, like pancakes.
Chocolate Oatmeal Brownies
1 box brownie mix (approx 18 oz size)
1/2 cup oil
1/2 cup low fat plain yogurt
1/2 cup quick oats
Mix all ingredients, pour in to a 9 x 13 prepared sprayed or crisco & floured pan.
1/4 cup quick oatmeal, sprinkle over top of batter in pan before putting in the oven
bake at 350 degrees for 25 minutes…
Try not to over bake, they can get a little dry
These are really good topped with ice cream or made in to a hot fudge brownie sunday!
