Veggie Cups

Sorta like a quiche but no crust.  When you don’t have pie crust in the freezer or you don’t feel up to rolling crust from scratch.  Or you just want to consume less calories.

These do great, if you have any leftover just pop them in a container or bags and throw in the freezer…

Veggie Cups

4 eggs

1 cup milk

4 ounces cheddar jack cheese

1 cup chopped broccoli

1 cup chopped carrots

1/4 cup diced onions

Salt & Pepper to taste

Beat eggs and milk, add the rest of the ingredients.   Pour in to prepared muffin or cupcake pans.   Bake at 350° for 25-30 minutes.
